Lettice have recently acquired a fantastic tandoor oven making us the only caterer in London to have a portable tandoor. A tandoor is a traditional Indian oven that can be used to make a variety of different dishes including curries, breads and kebabs.
The egg shaped oven is coal heated and reaches extremely high temperatures, food is put on long skewers and placed inside the oven. The unique aspect of tandoor cooking is that because the temperature within the oven is so high meats are sealed very quickly and effectively steamed leaving them moist and tender.
Breads are stuck to the inside of the oven to cook so have a cripsy outer coating with a soft inside. Tandoor cooking does not use any fat so is also healthy way to eat.
